3 Chocolate Brownies with Pecans by Chef Nicolas Paciello

EQUIPMENT NEEDED : Perfect Brownie Mold, Cook N Cool



Ingredients

  • Baking chocolate in pieces 125g / ½ cup + 2 TBSP
  • Butter, softened 90g / ¾ cup
  • Sugar 90g - ¾ cup
  • Eggs 2
  • Cornstarch 45g / ⅓ cup
  • Almond powder 45g / ⅓ cup
  • Salt 1 pinch
  • Baking powder 5g / 1 tsp
  • White chocolate chips 30g / ¼ cup
  • Milk chocolate chips 30g / ¼ cup
  • Mix of cashews, hazelnuts, almonds, pecans, raisins 60g / ½ cup

 

Preperation

  1. Preheat the oven to 350 ° F
  2. Melt the butter and the baking chocolate
  3. Add the sugar
  4. Add the eggs. Do not over mix
  5. Sift the cornstarch, ground almonds, baking powder and salt together. Set aside
  6. Add the sifted ingredients to the egg mixture
  7. Add the white chocolate and milk chocolate chips
  8. Place the Silpat Perfect Brownie Mold on your Cook N Cool, or other perforated baking sheet (if using non-perforated sheet, please allow additional baking time)
  9. Fill in the mold cavities ¾ of the way full
  10. Add the mixture of nuts and raisins on top
  11. Bake in preheated oven for 14 minutes
  12. Allow to cool for 10 minutes and then unmold
