Recipe: Perfect Non-Stick Pumpkin Chocolate Chip Muffins
- 4 eggs
- 2 cups sugar (we used a mix of brown sugar & granulated)
- 1 (15 ounces) can solid-pack pumpkin purée
- 1-1/2 cups canola or vegetable oil
- 3 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tbsp pumpkin pie spice
- 1 tsp salt 2 cups semisweet chocolate chips
- Preheat your oven to 375°F.
- In a mixing bowl, combine eggs, sugar, pumpkin, and oil
- In a separate bowl, mix flour, baking soda, baking powder, pumpkin pie spice, and salt
- Gradually add dry ingredients to the wet mixture, and stir until well combined.
