Ingredients: 

  • 5.6 tablespoons (80 g) unsalted butter
  • 1 cup + 1 tablespoon + 2/3 teaspoon (135 g) cake/all-purpose/plain flour
  • 1 ¼ teaspoons (5 g) baking powder
  • 1/4 cup + 1 tablespoon (75 g) fresh whole eggs
  • 1/3 cup + 1 tablespoon + 3/3 teaspoon (85 g) sugar
  • 1 tablespoon (20 g) honey
  • 3/8 teaspoon (1.5 g) sea salt
  • ¾ teaspoon (5 g) vanilla extract
  • Zest of 1 Lemon
  • 3 tablespoons (45 g) fresh whole milk

Method:

  1. Prepare the Madeleines:

    • Begin by melting the butter and setting it aside.
    • Sift the cake flour and baking powder together and set aside.
    • In a stand mixer with the whisk attachment, mix the eggs and sugar until light and pale in color.
    • Add honey, salt, vanilla extract, and lemon zest to the egg mixture.
    • Gradually add the sifted cake flour and baking powder, mixing until just combined. Avoid overmixing.
    • Incorporate the milk and melted butter into the batter, mixing until just combined.
    • Allow the batter to rest for 3 hours in the refrigerator or overnight [or 20 minutes in the freezer].
  2. Baking:

    • Preheat the oven to 390°F/200°C.
    • Generously fill the Genuine Silpat Madeleine molds ¾ of the way full with the prepared batter.
    • Bake for 10 to 20 minutes until golden brown and lightly springy to the touch.
    • Once baked, let the madeleines cool slightly before unmolding.
