RECIPE: Raspberry Banana Vegan Ice Cream Pops

So it’s the hottest summer and you need to cool down with some ice cream but you don’t have an ice cream maker? We’ve got you, besties! 

Using your favorite Silpat® mold, a couple of frozen bananas, whatever other fruits you have on hand or picked up at the market, and your go-to plant-based milk, you’re well on your way to the easiest and most refreshing vegan ice cream. We love our Silpat® Mini-Brioche Mold for this recipe because it’s the prettiest shape, ideal cup-size serving sizes, and you can easily add popsicle sticks to take them on the go.


  • Bananas: 3
  • Raspberries: 1 cup
  • Red currants: 1 cup
  • Almond milk (or your choice of plant-based milk): 1 ½ cups


  1. Prepare the Bananas:
    • Cut your bananas into 2-inch thick slices and place them on your perforated tray.
    • Move the bananas to your freezer until frozen, at least 3 hours.
  2. Blend the Ingredients:
    • In a standing mixer, add the frozen bananas, raspberries, red currants, and almond milk.
    • Mix on high until combined and the mixture is creamy and thickened.
  3. Strain the Mixture:
    • Strain the mixture through a fine sieve to filter out any seeds.
  4. Fill the Mold:
    • Place the Silpat® Mini-Brioche Mold on your perforated tray and fill the wells with your creamy mixture.
  5. Freeze:
    • Move the tray to your freezer and chill for at least 3 hours until set.
