Ingredients for the Crumb Topping (Streusel):

  • 1/8 cup (55g) unsalted butter, at room temperature
  • 3 tablespoons + 1 teaspoon (80g) brown sugar
  • 1/4 cup + 1/2 tablespoon (65g) all-purpose/plain flour
  • 3/8 cup + 1 teaspoon (65g) almond powder
  • 1/8 teaspoon (0.4g) ground cinnamon

Ingredients for the Muffins:

  • 2 cups (265g) all-purpose/plain flour
  • 1 tablespoon (10g) baking powder
  • 3/4 teaspoon (4g) salt
  • 1/4 cup (55g) canola or vegetable oil
  • 1/4 cup (55g) unsalted butter, melted
  • 1 3/4 cups (200g) sugar
  • Zest of 1/2 lemon
  • 1/3 cup + 1 tablespoon (95g) eggs, room temperature
  • 2/3 cup + 2 teaspoons (160g) milk, slightly warmed
  • 1/2 teaspoon (4g) vanilla extract
  • 1 1/4 cups (175g) blueberries


Prepare the Crumb Topping (Streusel):

  1. Mix together the butter, brown sugar, flour, almond powder, and cinnamon in a stand mixer with the paddle attachment until a crumbly texture is obtained.

  2. Alternatively, you can rub the mixture between your hands to achieve an even crumble.

    Note: All-purpose flour can be substituted for almond powder.

Prepare the Muffins:

  1. Preheat the oven to 375°F/190°C.

  2. Sift together the flour, baking powder, and salt.

  3. In a mixing bowl, whisk together the oil, melted butter, sugar, and lemon zest.

  4. Mix in the eggs, milk, and vanilla extract until well combined.

  5. Add the dry sifted ingredients to the wet ingredients, and whisk gently until just combined.

  6. Fold in the blueberries gently.

  7. Fill each cavity of the Silpat Perfect Muffin Mold 2/3 of the way full with the batter.

  8. Top each muffin with the prepared streusel.

  9. Bake for 15-17 minutes or until a toothpick inserted into the center comes out clean.

  10. Allow the muffins to cool in the mold for 30 minutes, then carefully unmold.
