- 1 tsp baking powder
- 1 tbsp pumpkin pie spice
- 1 tsp salt 2 cups semisweet chocolate chips
Instructions:
- Preheat your oven to 350°F.
- In a mixing bowl, combine eggs, sugar, pumpkin, and oil.
- In a separate bowl, mix flour, baking soda, baking powder, pumpkin pie spice, and salt.
- Gradually add dry ingredients to the wet mixture, and stir until well combined.

- 1 ½ cup all-purpose flour
- ⅔ cup granulated white sugar
- ½ cup brown sugar
- 1 ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ⅛ teaspoon grated nutmeg
- 1 cup pumpkin puree
- ½ cup unsalted butter
- 3 tablespoon milk

- 1 egg yolk

Instructions:

Ingredients:
Cookie Crust:
- 2 cups simple mills honey cinnamon cookies ground finely in food processor
- 65 gr melted butter
Filling:
- 450 gr philadelphia cream cheese
- 145 gr swerve granular
- ⅛ teaspoon maldon salt
- 2 eggs
- 1 egg yolk
- 5 gr vanilla extract
- ⅛ cup sour cream
- 212 gr libby's brand pumpkin pure
- 1 teaspoon ceylon cinnamon
- 1 teaspoon pumpkin spice
Instructions:
- Preheat oven to 180°c/ 350 °F
- Mix cookies + butter in a bowl.
- Line the base of Silpat molds
- Freeze for 5 min – then bake for 5 min at 350 ° F
- Let cool
- Put cream cheese in a glass or ceramic bowl in the microwave until very soft then add sweetener, vanilla, spices, cream, salt, eggs and pumpkin puree
- Pour cheesecake over cookie crumb and bake over a perforated tray for aprox 18- 20 mins until firm and almost set. Remember it will continue to set when cool
- Freeze or refrigerate for about 1-2 hours to unmold
- Serve with whipped cream and sprinkle with pumpkin spice
